Lemon Curd

An easy lemon curd recipe and very lemony. This makes about 3/4 pint. Went really well with my chocolate/raisin scones but would also probably be good on toast. It was gone before I got chance to try.

  • Ingredients
  • Zest and juice from 3-4 lemons
  • 80g (1/3c) sugar
  • 2 eggs
  • 3 yolks
  • 2tbsp milk
  • 90g (3/4 stick) of unsalted butter
  • Dash salt
  • Directions
  • Zest and juice 4 lemons
  1. IN a small pan on a medium heat, whisk the eggs, yolks, milk, lemon juice, zest and sugar. for a couple of minutes, until light in color.
  2. Add the butter.
  3. Reduce the heat slightly and whisk constantly for 5 more minutes until thickened to a custard consistency.
