Peppermint Buttercream and Cream Cheese Frosting

A peppermint flavoured buttercream and cream cheese frosting to compliment it.  Works well with chocolate cake – I used it for North Pole Cupcakes.

Ingredients
Peppermint Cream Cheese Frosting
  • 125g (4 oz) cream cheese
  • 115g (1c) butter
  • 1 tsp peppermint extract
  • 190g (1½c) icing sugar
Peppermint Buttercream
  • 115g (1c) unsalted butter
  • 1tbsp milk
  • 1 tsp peppermint extract
  • 190g (1½c)icing sugar
Directions
Peppermint Cream Cheese Frosting
  1. Beat the cream cheese, butter and peppermint extract until creamy.
  2. Slowly add the icing sugar and beat until smooth. Add more icing sugar/peppermint to taste.
Peppermint Buttercream
  1. Beat the butter until smooth, then add the milk and peppermint extract.
  2. Slowly add the icing sugar and beat until fluffy.
  3. Optional: I mixed in some Candy cane sprinkles before filling the cupcakes.
