Eton Mess Cupcakes

Eton Mess is a combination of strawberries, meringue and cream and is usually served in a glass. These cupcakes are a twist on that – speckled with chopped strawberries, stuffed with strawberry jam, frosted with strawberry frosting and sprinkled with Dr. Oetker Eton Mess Meringue sprinkles.

Serves: 12
Strawberry Cupcakes
  • 110g plain flour
  • 22g cake flour
  • ½ tbsp baking powder
  • ½ tsp salt
  • 75g unsalted butter (softened)
  • 145g sugar
  • 1 egg
  • 1 egg white
  • 50ml whole milk
  • ½ tsp vanilla extract
  • 80g strawberries (plus small strawberries for garnish)
Strawberry Frosting
  • 1 batch of strawberry frosting
  • Strawberry jam (for filling)
Strawberry Cupcakes
  1. Preheat the oven to 175C/350F, prepare 12 muffin cases.
  2. Mix the dry ingredients in a small bowl.
  3. Cream the butter and sugar until light and fluffy, then add the egg and egg white.
  4. On low speed, add the milk and vanilla, then the dry ingredients until just combined.
  5. Fold in the strawberries.
  6. Fill the cases ⅔ and bake for ~18 mins, until a skewer come out clean.
  7. Cool thoroughly before frosting.
Strawberry Frosting
  1. Make up a batch of frosting.
  2. Cut a cone in the top of each cupcake.
  3. Fill with 1 tsp strawberry jam, then replace the cone.
  4. Frost with strawberry frosting and decorate with sprinkles.
