Apple Mince Pie Bars

After the massive popularity of the Bakewell Slices I made, I needed something similar but different. These apple mince pie bars taste like Christmas and the sliced apples make them distinctly different than ordinary mince pies. They’re easy to make and can be sliced into bite sized pieces.

Apple Mince Pie Bars

Serves: 10 servings
Pastry Base
  • 105g (1c) cake flour
  • 105g (1c) wholemeal flour
  • 30g (1/3c) almond flour
  • 30g (1/3c) rolled ots
  • 40g (1/3c) caster sugar
  • 40g (1/3c) brown sugar
  • 160g unsalted butter, cubed
  • Zest of 1 orange
Apple Mince Pie Filling
  • 2 apples, sliced
  • Juice from 1 orange
  • 40g (1/4c) brown sugar
  • 220g (1¼c) mincemeat
  • 40g flaked almonds
Pastry Base
  1. Pulse the flours, sugar, butter and zest in a food processor until a dough forms.
  2. Press ⅔ of the mixture into a greased 9" baking tin lined with greaseproof paper.
Apple Mince Pie Filling
  1. Preheat the oven to 180C/350F.
  2. Slice the apples, then heat to boiling with the orange juice and brown sugar.I left the skin on but you could peel them if you have a skin aversion.
  3. Cook for 5 minutes until the apples start to soften, then remove from the heat and mix with the fruit mincemeat.
  4. Spread the mixture over the base, then spread the remaining crust mixture on top.
  5. Sprinkle evenly with flaked almonds, gently pressing the almonds into the filling/top crust so they don't just fall off.
  6. Bake for 40-45 mins until golden brown.
  7. Allow to cool, then dust with icing sugar and cut into squares.
