Coca Cola Cupcakes

I’m always amazed by some of the crazy recipes which use unusual ingredients. I’ve had past success with tomato soup cupcakes and other unusual ingredients like beetroot. Despite the cola, these chocolate cupcakes actually just tasted like chocolate. They were fun to make though due to the .

Coca Cola Cupcakes

Chocolate Cola Cupcakes
  • 250g caster sugar (golden caster sugar if you have it)
  • 125g butter
  • 1 egg
  • 125ml buttermilk
  • 1½ tsp vanilla extract
  • 175ml cola
  • 200g plain flour
  • Dash salt
  • 2 tbsp cocoa powder
Whipped Buttercream Frosting
  • 1 batch of whipped buttercream frosting
  • Decorations: A cherry and sprinkles or mini cola bottles
Chocolate Cola Cupcakes
  1. Preheat the oven to 175C/350F, prepare 12 muffin cases.
  2. Cream the butter and sugar until light and fluffy, then add the egg and vanilla.
  3. Add the buttermilk and cola.
  4. In a small bowl, mix the flour, cocoa powder and salt, then add to the wet ingredients.
  5. Fill the cases ⅔ full and bake for 18-20 mins, until a skewer comes out clean.
  6. Cool before frosting.
  1. Make up a batch of whipped buttercream frosting.
  2. Pipe or spread over the cupcakes and top with a cherry, sprinkles and a straw.
This would also work well with American buttercream frosting.
