Donauwelle

A “Danube Wave” cake is a rich German chocolate cake loaded with cherries. The bottom layer is vanilla sponge, on top of that is chocolate sponge, then a layer of whole black cherries, then vanilla pudding and finally dark chocolate and Nutella. Oddly, this did taste alcoholic despite there no alcohol in it. I was tempted to soak the cherries in Kirsch overnight but decided to stay true to the original recipe and keep the cake non-alcoholic instead. Maybe I’m just so used to cherries being soaked in Kirsch I almost convince myself that everything with cherries is alcoholic.

Ingredients
Sponge
  • 3 eggs
  • 130g caster sugar
  • 130ml vegetable oil
  • 1 tsp vanilla extract
  • 130ml milk
  • 1½ tsp baking powder
  • Dash salt
  • 270g cake flour
For the chocolate sponge, add to the above...
  • 1 tbsp cocoa powder
  • 1 tbsp milk
Filling
  • Powdered vanilla pudding
  • 300g cherries
Topping
  • 150g dark chocolate
  • 1.5tbsp Nutella
  • 1 tbsp honey
Directions
Sponge
  1. Preheat the oven to 180C/350F, grease an 11" x 7" cake pan.
  2. In a small bowl, mix the flour, baking powder and salt.
  3. Cream the eggs and sugar for a couple of minutes, then add the oil and vanilla extract.
  4. Stir in the dry ingredients, then add the milk. Spread half of the batter into the pan.
  5. Stir the cocoa and 1 tbsp milk into the remaining batter, then spread over the first layer.
  6. Arrange the cherries over the batter and bake for 20-25 mins until a skewer comes out clean.
  7. Cool on a wire rack while you make the pudding.
  8. Once the cake is cool, spread the pudding over the top and freeze to set.
  9. Once the pudding layer is almost frozen, melt the chocolate, Nutella and honey. Spread over the (hopefully) firmed pudding and chill again to set the chocolate.
  10. Keep chilled until ready to serve..

Most recipes for Donauwelle use instant vanilla pudding. I used Bird’s Dream Topping, which I froze so I could spread the chocolate on top.
