Rum Cupcakes

I couldn’t pass up the chance to make something pirate related. These cupcakes are packed with rum, frosted with cream cheese and more rum and topped with pirate treasure. Given the choice, I think most pirates would prefer these to whatever it is they normally eat.

Ingredients
Rum Cupcakes
  • 140g plain flour
  • 1 tsp baking powder
  • Dash salt
  • 2 eggs
  • 200g sugar
  • 65g butter
  • 120ml milk
  • 1 tsp vanilla extract
  • 1 tsp rum flavouring
  • 2 tbsp rum
Rum Cream Cheese
  • 85g butter
  • 85g cream cheese
  • 180g icing sugar
  • 1 tbsp rum
  • 1 tsp vanilla extract
  • 1 tbsp milk (if needed)
  • Optional: Chocolate pirate coins and silver ball sprinkles
Directions
Rum Cupcakes
  1. Preheat the oven to 175C/350F, line a 12 cupcake pan.
  2. In a small bowl, mix the flour, baking powder and salt.
  3. Beat the eggs and sugar for 5 mins - it should tripple in volume.
  4. Stir in the flour with a spatula.
  5. Melt the butter and milk in a small pan/microwavable bowl, then add the rum and extracts.
  6. Cool for a couple of minutes, then mix into the batter until just combined.
  7. Fill the cases ⅔ full and bake for 14-16 mins until springy and a skewer comes out clean.
  8. Cool before frosting.
Rum Cream Cheese Frosting
  1. Beat the butter and cream cheese until light.
  2. Stir in the icing sugar. start with a spatula, then use the mixer to mix well until smooth.
  3. Add the rum, vanilla extract and enough milk to reach a pipeable consistency.
  4. Transfer to a piping bag to pipe swirls onto the cupcakes.
  5. Optional: Since these were for Talk Like a Pirate Day, I added some chocolate pirate coins.

The silver balls were from Dr Oetker, but not at all what I expected. I remember them from being a kid as being like ball bearings – rock hard. These were different though, they were more like soft chocolate balls with a crunchy coating. Definitely need more sprinkles next time.
