Poison Apple Slice

These are blondies (brownies without the chocolate) with a layer of apple in the middle and a cinnamon maple glaze on top. Great to make at Halloween if you do have any apples left.

Poison Apple Slices

Serves: 8" square pan (15 squares)
Cake Base
  • 115g butter
  • 25g caster sugar
  • 100g dark brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 140g plain flour
  • ½ tsp baking powder
  • Dash salt
Apple Filling
  • 2 apples (any variety)
  • 1 tbsp brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp butter
  • 1 tsp vanilla extract
Maple Glaze
  • 60ml maple syrup
  • 60g icing sugar
  • ½ tsp vanilla extract
  • 1 tsp cinnamon
Apple Filling
  1. Peel and slice the apples, then cook on a high heat for ~5 mins until softened.
  2. Remove to cool while you make the cake.
  1. Preheat the oven to 175C/350F, line an 8" square baking pan with greaseproof paper and butter.
  2. Cream the butter and sugar until light and fluffy.
  3. Add the egg and vanilla.
  4. Mix the dry ingredients in a bowl, then beat into the butter/sugar. Mix just to combine (don't overmix or your cake will be dense).
  5. Spread half of the mixture into the pan, then spread the apples on top.
  6. Add the remaining half of the mixture on top, then bake for 20-25 mins until golden brown. It will puff up during baking but sink again as it cools.
  7. Cool on a wire rack for 10 minutes, then glaze while still slightly warm.
Maple Glaze
  1. Boil everything in a pan until thickened.
  2. Spread over the top of the cake.
  3. Allow to set before slicing.
