Firework Cupcakes

After the huge popularity of the Chocolate Bonfires last week, these vanilla firework cupcakes were perfect for watching the Bonfire fireworks tonight. It’s the first time I’ve done a multi-coloured swirl but there are a few tricks I picked up. The bigger the piping bag, the better – regular sized ones are fiddly to spread frosting into. You need to keep it in long strips of different colours instead of scooping it in like normal. It should come out like toothpaste with all of the stripes next to each other.

Ingredients
Vanilla Cupcakes
  • 115g butter
  • 115g caster sugar
  • 1½ tsp vanilla extract
  • 2 eggs
  • 115g self-raising flour
Strawberry Buttercream
  • 230g icing sugar
  • 115g butter
  • 1 tsp vanilla extract
  • 1 tsp red/blue/green/yellow food colouring
Extras
  • Multi coloured stars
  • Popping candy
Directions
Cupcakes
  1. Preheat the oven to 175C/350F, prepare 10 cupcake cases.
  2. Beat the sugar and butter for at least 5 mins until light and fluffy.
  3. Add the eggs and vanilla extract, then the flour.
  4. Mix for another 5 mins until smooth. The key here is mixing really well.
  5. Fill the cases ⅔ full and bake for ~14 mins until golden brown and a skewer comes out clean.
  6. Cool on a wire rack before filling/frosting.
Filling and Buttercream
  1. Beat the butter until soft, then stir in the icing sugar with a knife before turning the mixer back on.
  2. Add the vanilla extract and beat for a couple of minutes.
  3. Split the frosting into four different bowls and use a few drops of food colouring to colour each batch.
  4. Use a pallette knife to fill a piping bag with each layer. Rather than spooning it in, you need long strips of icing. A Wilton #10 tip is good for making the right thickness.
  5. Pipe swirls on top of the cupcakes and decorate with multi-coloured stars, popping candy or any other firework themed sprinkles you have to hand. .

Fill the cases 2/3 full and bake for 15 mins
