Snickers Bars

Did I say Snickers? I mean Snackers… similar to, but legally distinctive from a Snickers bar (sue me Mars). This ultimate replication chocolate bar as a shortbread base, layer of peanut-speckled marshmallow on top, caramel on top of that, then chocolate, peanut butter and more peanuts. It may sounds like a lot, but each layer is very thin, so the whole lot is no thicker than a regular chocolate bar.

Ingredients
Shortbread Base
  • 40g (1/4c) rolled oats
  • 110g (3/4c) plain flour
  • 40g (1/3c) icing sugar
  • 75g (1/2c) butter
Marshmallow Layer
  • 30g butter
  • 100g caster sugar
  • 30ml evaporated milk
  • 180g marshmallow creme
  • 1 tsp vanilla extract
  • 130g salted peanuts, chopped
Caramel Layer
  • 150g caramels (Werther's Originals)
  • 30ml double cream
Chocolate Topping
  • 80g milk chocolate
  • 30g peanut butter chips
  • 30g peanut butter
Directions
Shortbread Base
  1. Preheat the oven to 160C/320F, line a baking tray.
  2. Beat the ingredients until a dough forms.
  3. Roll out the dough to 4-5mm thick, cut out rounds using a cookie cutter. In half of them, cut a slightly smaller inner circle, so you have just the outside ring of a circle.
  4. Arrange the large circles on the baking tray and top with the smaller cookies.
  5. Prick with a fork and bake for 12-15 mins.
  6. Reduce the temperature to 300F and bake for ~15 mins until golden brown.
  7. Cool on a wire rack before filling.
Marshmallow Peanut Layer
  1. Boil the butter, sugar and evaporated milk for 5 mins, remove from the heat and stir in the peanut butter, marshmallow cream, vanilla extract and peanuts.
  2. Spread over the bases.
  3. Freeze for 30 mins to set the marshmallow.
Caramel Layer
  1. Melt the caramels and cream, then spread over the chilled marshmallow layer. Return to the freezer to set.
Chocolate Topping
  1. Melt the chocolate, peanut butter and peanut butter chips. Spread over the caramel and cool/freeze before slicing into bars.
