Mint Choc Chip Cupcakes

Mint choc chip is rum and raisin’s only contender in the best ice cream flavour field. These light chocolate cupcakes are filled with mint chocolate Angel Delight and frosted with peppermint buttercream and mint Aero shavings.

Despite the name, these had lots of chocolate and lots of mint, but no chocolate chips. Next time I’d try with 50g or so chocolate chips folded in to the batter.

Ingredients
Chocolate Cupcakes
  • 240ml water
  • 40g cocoa powder
  • 185g plain flour
  • 2 tsp baking powder
  • Dash salt
  • 115g butter
  • 180g caster sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • ⅓ sachet (20g) Angel Delight - Mint chocolate or chocolate flavour
Mint Choc Frosting
  • 200g butter
  • 300g icing sugar
  • Remaining ⅔ sachet of Angel Delight †
  • 150ml milk
  • ½ tsp peppermint extract
  • Green food colouring
  • Mint chocolate (eg: Aero) to garnish
Directions
Cupcakes
  1. Preheat the oven to 190C/375F, line a cupcake pan.
  2. Boil the water, then mix in the cocoa powder until smooth. Allow to cool...
  3. Cream the butter and sugar until fluffy.
  4. Add the eggs, then the vanilla extract.
  5. Mix the dry ingredients then add to the mixture. Stir until just combined.
  6. Add the cooled cocoa powder/water and mix.
  7. Fill the cases ⅔ full and bake for 16-20 mins until a skewer comes out clean.
  8. Cool on a wire rack before frosting.
Frosting
  1. Beat the butter, then add the icing sugar, extracts and food colouring.
  2. Make up the remaining Angel Delight according to the instructions. Use less milk than normal as it should be thick enough to pipe.
  3. Fill a piping bag with half buttercream and half Angel Delight. Ideally, there should be two horizontal strips and slightly more buttercream than Angel Delight. The buttercream is heavier so it doesn't come out as quickly. If you're not careful you end up squeezing al of the chocolate Angel Delight out first then you're left wth a bag of buttercream.
  4. Pipe over the cooled cupcakes and top with Aero mint balls or other mint chocolate. I also grated some chocolate on top.
Notes
†Angel Delight is an instant pudding mix. The closest American equivalent is Jello instant pudding.
