Chinese Walnut Cookies

Packed with walnuts, these crunchy golden brown cookies have a toasted walnut flavour.

Serves: 12 cookies
  • 12 cookies
  • 280g plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 105g butter (room temperature)
  • 100g caster sugar
  • Dash salt
  • 1 egg
  • 125g walnuts (+12 walnut halves)
  1. Cream the butter and sugar for a couple of minutes.
  2. Add the flour, salt, baking powder and baking soda.
  3. Mix in half of the egg, then stir in the chopped walnuts.
  4. Roll into a dough ball, wrap in plastic and chill overnight.
After chilling...
  1. Preheat the oven to 175C/350F, line a baking tray.
  2. Roll the dough into a log and cut into 12 pieces.
  3. Roll each piece into a ball, flatten slightly, then press a walnut into each.
  4. Brush with the remaining egg and bake for ~20 mins.
  5. Cool on the tray then transfer to a wire rack.
