Speculaas Cherry Pies

Marzipan, cherries and speculaas cookies in one delicious tart. I filled half with lemon curd and some with jam.

Ingredients
Pastry
  • 400g plain flour
  • 2½ tbsp baking powder
  • Dash salt
  • 2 tsp cinnamon, cloves and ginger (spice is good!)
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 250g butter
  • 250g dark brown sugar
  • 4 tbsp buttermilk
Almond Filling
  • 250g blanched almonds
  • 250g caster sugar
  • 2+ tbsp water
  • 1 egg yolk
Assembly
  • Cranberry/cherry jam (Good quality) †
  • Egg wash
Directions
Pastry
  1. Pulse everything in a food processor until a dough starts to form. Don't overmix.
  2. Wrap in plastic and chill overnight.
After chilling...
  1. Preheat the oven to 350F/175C.
  2. Roll out the dough to ~3mm thick.
  3. Cut discs and line greased mini pie pans. §
  4. Pulse the sugar and almonds to fine powder, then add the egg yolk and water.
  5. Fill each tart case with filling.
  6. Top with 1 tsp jam.
  7. Place another disc of pastry on top and crimp the sides.
  8. Decorate with an almond and brush with egg wash.
  9. Bake for 20 mins until golden brown.
Notes
† Using decent jam for this makes a big difference. Get anything with seeds in it - some cheap jams are just coloured syrup.
§ I'd blind bake the crusts next time. The filling wasn't particularly wet, but the pies were soggy in places.

Lemon curd is really easy to make yourself. The recipe below made enough to fill around 8 pies.

Ingredients
  • 65g (1/3c) caster sugar
  • Zest from 1 lemon
  • Dash salt
  • 80ml (1/3c) lemon juice
  • 2 eggs
  • 40g (2½ tbsp) butter
Directions
  1. Boil everything for 5 mins until thickened.
  2. Strain through a fine mesh sieve.
