Lemon Donuts

No Comments Baking, Cake and Everything Else

Baked donuts with a fresh lemon flavour and a lemon yogurt glaze. I coated some with cyrstallized ginger and some with mini lemon meringues.

  • 60g caster sugar (or vanilla sugar)
  • 1 egg
  • ½ tsp vanilla extract
  • 45g (3 tbsp) yogurt
  • 20ml (1½ tbsp) milk
  • 30g butter
  • 190g plain flour
  • 1 tsp baking powder
  • Dash salt
  • 100g icing sugar
  • 1-2 tbsp lemon juice
  • 1 tbsp greek yogurt
  1. Preheat the oven to 175C/350F, grease a mini donut pan.
  2. Whisk the egg, sugar and vanilla extract.
  3. Add the melted butter, milk and yogurt and mix well.
  4. Fold in the dry ingredients.
  5. Fill the pan ⅔ full and bake for 10-14 mins until lightly golden.
  6. Cool before glazing.
