Baked donuts with a fresh lemon flavour and a lemon yogurt glaze. I coated some with cyrstallized ginger and some with mini lemon meringues.

Ingredients
Donuts
- 60g caster sugar (or vanilla sugar)
- 1 egg
- ½ tsp vanilla extract
- 45g (3 tbsp) yogurt
- 20ml (1½ tbsp) milk
- 30g butter
- 190g plain flour
- 1 tsp baking powder
- Dash salt
Glaze
- 100g icing sugar
- 1-2 tbsp lemon juice
- 1 tbsp greek yogurt
Directions
- Preheat the oven to 175C/350F, grease a mini donut pan.
- Whisk the egg, sugar and vanilla extract.
- Add the melted butter, milk and yogurt and mix well.
- Fold in the dry ingredients.
- Fill the pan ⅔ full and bake for 10-14 mins until lightly golden.
- Cool before glazing.
