Chocolate Hazelnut Banana Cupcakes

Banana, chocolate, hazelnuts and marshmallows in one cupcake? What an awesome idea. I split these banana cupcakes into two – half filled with Nutella and chopped hazelnuts and frosted with marshmallow buttercream, and the other half filled with marshmallow buttercream and frosted with Nutella and hazelnuts.

Chocolate Hazelnut Banana Cupcakes

Serves: 16 cupcakes
  • 115g butter
  • 100g caster sugar
  • 50g caster sugar
  • 15ml (1 tbsp) milk
  • 45ml (3 tbsp) yogurt
  • 1 tbsp vanilla extract
  • 2 eggs
  • 140g plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • Dash salt
  • 1½ medium sized mashed bananas
Marshmallow Buttercream Frosting
  • 250g icing sugar
  • 115g butter
  • 1 tsp vanilla extract
  • 2 tbsp (30ml) double cream
  • 5 jumbo marshmallows (of equivalent volume - about ¾ cup)
Garnish and Filling
  • 6 tbsp Nutella
  • Chopped Hazelnuts
  • Mini Marshmallows
Marshmallow Frosting
  1. Beat the butter, vanilla extract and double cream until smooth.
  2. Slowly stir in the icing sugar, then beat on high speed.
  3. Grill or bake the marshmallows until melted, then beat into the frosting straight away. They need to be melted and gooey, but not toasted.
  4. Fill a piping bag and cool before use (this will allow the frosting to stiffen up).
  1. Preheat the oven to 175C/350F, prepare 16 cupcake cases.
  2. Cream the butter and sugars until fluffy.
  3. Whisk the eggs, milk, yogurt and vanilla extract, then add to the butter sugar.
  4. Mix the flour, baking soda, baking powder and salt in a small bowl. Stir into the mixture until just combined.
  5. Fold in the mashed bananas.
  6. Fill the cases ⅔ full and bake for 18-20 mins until golden brown.
  7. Cool before assembling.
  1. Cut a cone in the top of each cupcake.
  2. Fill with 1 tsp Nutella.
  3. Replace the cone and pipe marshmallow on top.
It's up to you whether to fill with Nutella and frost with buttercream or fill with buttercream and frost with Nutella - both work well.

Bake for 18 mins until golden brown and springy
