Ukranian Apple Cake (Yabluchnyk)

In honour of Ukraine’s awful winning performance at Eurovision 2016, Yabluchnyk is a traditional layered apple cake.

  • 50g caster sugar
  • 115g butter
  • 190g plain flour
  • Dash salt
  • 2 tsp baking powder
  • 1 egg
  • 80ml double cream
  • 4 medium apples
Streusel Topping
  • 30g (2 tbsp) butter
  • 75g brown sugar
  • 30g (2 tbsp) flour
  • 2 tsp cinnamon
  1. Preheat the oven to 190C/375F, grease a springform pan.
  2. Pulse everything except the apples in a food processor until it resembles breadcrumbs.
  3. Spread into the pan.
  4. Peel and slice the apples, then arrange on top of the cake mixture.
Streusel Topping
  1. Melt the butter then stir with the remaining ingredients. Sprinkle over the apples.
  2. Bake for 20-25 mins until golden brown.
