In honour of Ukraine’s awful winning performance at Eurovision 2016, Yabluchnyk is a traditional layered apple cake.

Ukranian Apple Cake (Yabluchnyk)

Ingredients
Cake
- 50g caster sugar
- 115g butter
- 190g plain flour
- Dash salt
- 2 tsp baking powder
- 1 egg
- 80ml double cream
- 4 medium apples
Streusel Topping
- 30g (2 tbsp) butter
- 75g brown sugar
- 30g (2 tbsp) flour
- 2 tsp cinnamon
Directions
- Preheat the oven to 190C/375F, grease a springform pan.
- Pulse everything except the apples in a food processor until it resembles breadcrumbs.
- Spread into the pan.
- Peel and slice the apples, then arrange on top of the cake mixture.
Streusel Topping
- Melt the butter then stir with the remaining ingredients. Sprinkle over the apples.
- Bake for 20-25 mins until golden brown.
- Label for Yabluchnik
- The streusel should be a sandy consistency
