These cookies have a soft texture and are filled with nuts. They’re rolled twice in icing sugar- once while they’re still warm then again after they’ve cooled down. This creates a crunchy inner layer which melts, and a uniform outer layer of icing sugar.

Ukranian Snowball Cookies

Ingredients
- 30g icing sugar
- Dash salt
- 115g butter
- ½ tsp vanilla extract
- 140g flour
- 40g chopped nuts
Directions
- Pulse everything in a food processor unti a dough just forms.
- Wrap in plastic and chill overnight.
After chilling...
- Preheat the oven to 175C/350F, line a baking sheet.
- Roll 1 tbsp balls of dough and place on the sheet with space between each.
- Bake for 10 mins until slightly spread.
- Cool for 5 mins, then roll in icing sugar before allowing to cool fully.
- Roll in icing sugar again after the cookies have cooled.
