Peanut Butter and Cranberry Molasses Bread

These mini loaves are a cross between a peanut butter cupcake and gingerbread. They have a strong caramel flavour with peanut and cranberry chunks. The frosting on top is a peanut butter frosting.

  • 200g dark brown sugar
  • 115g butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 210g plain flour
  • ½ tsp baking soda
  • Dash salt
  • 20g molasses
  • 100g peanut butter
  • 80g peanut butter chips
  • 1 jar (250g) cranberry sauce
Directions
  1. Preheat the oven to 175C/350F, grease a couple of mini loaf pans.
  2. Cream the butter and sugar until fluffy.
  3. Add the eggs and vanilla and mix well.
  4. Mix the dry ingredients in a small bowl, then stir into the mixture.
  5. Mix in the peanut butter and cranberry sauce.
  6. Fold in the peanut butter chips. If the mixture looks too dry, add a few tablespoons of milk.
  7. Pour into the mini loaf pans and bake for 30-40 mins until set.
