Smores Cupcakes

Independence day is a chance to indulge in oversized American desserts, and anything Smores themed are a great example. These chocolate cupcakes have a marshmallow filling, marshmallow frosting and are topped with cracker crumbs and mini marshmallows.

Ingredients
Chocolate Cupcakes
  • 45g cocoa powder
  • 95g plain flour
  • ½ tsp baking powder
  • ¾ tsp baking soda
  • Dash salt
  • 2 eggs
  • 100g caster sugar
  • 100g light brown sugar
  • 80ml vegetable oil
  • 2 tsp vanilla extract
  • 120ml buttermilk*
Marshmallow Filling
  • 60g butter
  • ½ jar marshmallow fluff
  • ½ tsp vanilla extract
  • 80g icing sugar
  • 30ml double cream/milk (if needed)
  • Dash salt
Frosting
  • 200g icing sugar
  • 20g icing sugar
  • 115g butter
  • 30ml double cream
  • 1 tsp vanilla extract
  • Dash salt
Decoration
  • 7 Marshmallows
  • Digestive/Cracker crumbs
Directions
Cupcakes
  1. Preheat the oven to 175C/350F, prepare 14 cupcake cases.
  2. Mix the dry ingredients in a small bowl.
  3. In a separate bowl, whisk the eggs, sugars, oil and vanilla extract.
  4. Mix the two together and add the buttermilk
  5. Mix until just combined, don't overmix - it should be a runny batter.
  6. Fill the cases ⅔ full and bake for 18-20 mins until springy.
  7. Cool before filling.
Filling
  1. Beat the butter until smooth, then add the marshmallow creme, vanilla extract and icing sugar.
  2. Add milk if too thick.
Frosting
  1. Beat the butter for a couple of minutes until creamy.
  2. Add the vanilla extract.
  3. Stir in the icing sugar and cocoa powder, then beat on high speed until smooth.
  4. Add milk if needed, then transfer to a piping bag.
Assembly
  1. Cut a cone in the top of each cooled cupcake.
  2. Fill with 1 tsp marshmallow filling.
  3. Replace the cone, then pipe chocolate frosting on top.
  4. Cut the marshmallows in half, then toast for a couple of minutes to brown.
  5. Top with a marshmallow and cracker crumbs.
