Kiwi Cupcakes

Kiwis are a delicious summer fruit and an interesting variation to cupcakes. These have strawberry buttercream on top.

Serves: 12 cupcakes
  • 1-2 whole kiwis, mashed
  • 115g butter
  • 140g caster sugar
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla extract
  • 210g plain flour
  • 1 tsp baking powder
  • Dash salt
  • 60ml milk
  • Strawberry buttercream
  1. Preheat the oven to 175C/350F. Line a 12-cup muffin.
  2. Peel and mash the kiwis.
  3. Cream the butter and sugar until fluffy.
  4. Add the egg, whites and vanilla extract.
  5. Mix the dry ingredients in a small bowl, then mix into the batter.
  6. Fill the cases ⅔ full and bake for 23-25 mins until golden brown and springy.
Buttercream Frosting
  1. Make up a batch of strawberry buttercream.
  2. Pipe on to the cooled cakes.

Baked cupcakes

Fill the cases 2/3 full and and bake until golden brown
