Ginger and Plum Cake

If you’re lucky enough to have fruit trees, late summer is a great time to make fruit pie, fruit cake, jam, or all of the above. This spiced plum cake is like a pineapple upside down cake (tarte tatin), but with plums.

  • 500g plums
  • 175g butter
  • 175g dark brown sugar
  • 140ml golden syrup
  • 2 eggs
  • 200ml milk
  • 300g plain flour
  • ½ tsp baking soda
  • 1 tbsp ground giner
  • 1 tbsp mixed spice
Directions
  1. Preheat the oven to 175C/350F, grease a baking tin.
  2. Slice the plums in half and arrange in the tin, cut side down.
  3. Melt the butter, sugar and syrup on a low heat until smooth, then remove to cool.
  4. Whisk in the eggs and milk, then stir in the flour, baking soda and spices.
  5. Mix until smooth, then pour over the plums and bake for ~50 mins until firm.
  6. Cool before slicing.
