Banoffee Brains

I go through phases of love and hate with bananas. I’ll avoid them for months then eat them until I’m sick of them. With it being so long since I’ve eaten them or used them in baking, I’m rekindling my love of them.

After the strawberry brain pudding went down so well, I wanted to try something a little different and get my money’s worth from the brain moulds. These Banoffee Brains have an Oreo biscuit base topped with banana custard with chunks of banoffee fudge.

Pumpkin Cheesecake

Pumpkin is a really distinct seasonal flavour which is great for baking with. These cheesecakes are layered, with an Oreo base (peanut butter Oreos even!), plain cheesecake in the middle and spiced pumpkin cheesecake on top. I traced a spider web outline with white chocolate after baking for extra spookiness.

Poison Apple Slice

These are blondies (brownies without the chocolate) with a layer of apple in the middle and a cinnamon maple glaze on top. Great to make at Halloween if you do have any apples left.

Apple Strudel

October means Oktoberfest, and that means apple strudel! This is stuffed with rum, walnuts, raisins, sultanas and apples. Not wanting to waste anything, I even used the peelings to make apple crisps. I’ve made so much custard over the last year I think I’ve reached a level of custard making where I can pretty much wing it. This batch was cinnamon flavoured to compliment the strudel filling. Happy Oktoberfest!

Pear and almond roll

Pears are in season and pair well with nuts. This filo pastry roll is similar to Greek Baklava – with layers of filo pastry stuffed with flaked almonds, ground almonds and honey, then apples and pears in the middle.

Peaches and Cream Slices

Peaches may come in a can (or mine do at least), but they’re are a great summer fruit. These cake bars can be sliced smaller to make bitesize servings, but I got 18 decent sized bars from the recipe, which makes a 9″ square. They’re similar to the Rhubarb and Custard Pie I made a few months back, but with peaches and cream cheese.

Donauwelle

A “Danube Wave” cake is a rich German chocolate cake loaded with cherries. The bottom layer is vanilla sponge, on top of that is chocolate sponge, then a layer of whole black cherries, then vanilla pudding and finally dark chocolate and Nutella. Oddly, this did taste alcoholic despite there no alcohol in it. I was tempted to soak the cherries in Kirsch overnight but decided to stay true to the original recipe and keep the cake non-alcoholic instead. Maybe I’m just so used to cherries being soaked in Kirsch I almost convince myself that everything with cherries is alcoholic.

Zwetschgen kuchen

Zwetschgnkuchen is a German plum cake traditionally made with yeast dough and Zwetschgen, which are Italian plums. Given my limited success with yeast, this cake/tart turned out really well. I had a jar of pears in mulled wine which I’ve been contemplating using in some kind of pie so with a jar of prunes to with them, this recipe was perfect. The dough turns out very soft and buttery after baking which makes it light.

Jaffa Drizzle Mini Loaves

Chocolate and orange are a great combination. I prefer mini loaves to individual Jaffa cakes – they’re easier to decorate and you can slice them for different serving sizes. I topped these with chocolate ganache and candied orange peel.
