Nanaimo bars are a Canadian bar from the city of Nanaimo. They have a biscuit and walnut base, custard in the middle and chocolate on top. They’re a good ‘make-ahead’ dessert for Canada Day on July 1st and a change from the predictable maple syrup and pancakes.

Alfajores

That’s alpha-whores, not alfazores, alfa-joores or any other anglicized pronunciation. These Spanish sandwich have a layer of dulce de leche in the middle and are usually sprinkled with coconut, almond or other chopped nuts.Mine were filled with desiccated coconut and flaked almonds. ¬†Though you can make dulce de leche (milk jam/confiture de lait) yourself by boiling a can of condensed milk, buying it premade saves time and potential kitchen explosions.

The cookies have a light and soft texture due to the cornflour.

Ukranian Snowball Cookies

These cookies have a soft texture and are filled with nuts. They’re rolled twice in icing sugar- once while they’re still warm then again after they’ve cooled down. This creates a crunchy inner layer which melts, and a uniform outer layer of icing sugar.
