Strawberry Cake Pops

Everyone goes mad for cakes on sticks. Recently it’s been lots of pies, but this week it was strawberry cake pops. I’d have preferred to use the Dr Oetker’s Eton Mess sprinkles which I used for strawberry donuts but they seem to have stopped selling them, whoch gave me the perfect excuse to break out the rainbow sprinkles instead.

Apple Spice Donuts with White Chocolate

Independence day seemed as good an excuse as any to make donuts, and I had some tricolour sprinkles left over from St George’s day in April. These have big chunks of apple and are spiced with cinnamon, nutmeg and cloves, then covered in white chocolate.

Hummingbird Cake

Similar to carrot cake (but without the carrots) this is a recipe from the American South. With pineapple, bananas and pecans, it’s light like a carrot cake and goes really well with lashings of cream cheese frosting.

Salted Caramel Donut Holes

With all of the donuts I’ve been making recently, the humble cinnamon covered donut hasn’t had a mention so far. I’ve also been itching for an excuse to try out the Dr Oetker salted caramel cupcake filling I got a couple of months ago. There’s no yeast in these, so if a baked donut is between a cupcake and a donut, these would be somewhere between a baked donut and a mini cupcake. They’re soft like donuts but they were made in my shiny new mini cupcake tray.

Dammsugare

“Vacuum cleaners” in Swedish, these chocolate cakes are covered in marzipan and dipped in chocolate. They’re a good use for either leftover cake or failed batches of cupcakes. I made them from the trimmings of Princesstårta cupcakes. Traditionally they’re flavoured with Arak or Punsch, but I used Amaretto instead.

Black and White Chocolate Donuts

Three types of chocolate in one tiny package. These mini chocolate donuts have both milk chocolate and white chocolate glazes and rainbow sprinkles. The white chocolate glaze has rum in, but you can skip that and replace with water if preferred. Like the banana donuts I made, I used browned butter because I think it adds more flavour. Banana Chocolate Chip Donuts

It’s National Donut Day and I’ve had a craving for banana bread for at least a couple of months now. These banana chocolate chip donuts filled a gap. They have a caramel glaze and Dr Oetker Banoffee sprinkles which have chewy bits of toffee and banana pieces. I also used wholemeal seeded flour (which you can sub for plain flour), which adds extra texture.

Princesstårta

In honour of Sweden’s awful winning Eurovision entry, I bit the bullet and made Princesstårta cupcakes. One of the more fiddly, time consuming cupcakes due to the multiple layers of cake and filling. The Princesstårta is a cross between a Victoria Sandwich and a Boston Cream Pie covered in marzipan. Created by Jenny Åkerström in the 1930s for a Swedish princess, it’s usually a full sized cake. These miniature versions are slightly bigger than a cupcake and have layers of jam, whipped cream and custard.
