Blueberry and Rhubarb Pie

The first (forced) crop of rhubarb is out, and this blueberry rhubarb pie goes really well with custard. Patsry can be hit and miss, but this recipe made enough for a 6″ circular pie dish with a lattice top. It doesn’t need blind baking and holds together well despite the liquid in the filling.

Cranberry and Almond Caramel Pie

A crunchy caramel tart filled with juicy cranberries and swimming in caramel. Served with Creme anglaise. The only thing I’d change is that next time I’d use less caramel and try an almond shortbread base. This makes enough for a 9″ pie, or a 7″ one and a 3″ one.

Pecan Pie with Bourbon Sauce

Need an excuse to buy whiskey and a new pie tin? Look no further. This uses the same pastry as my apple-cranberry pies and goes well with the pecan filling. They’ll keep for a couple of days in the fridge, or two months in the freezer.

If you don’t have small tart tins, you can make one large one in a 23cm tin and bake it for 40 minutes.

Raspberry Cheesecake

This was a great alternative to Christmas Pudding, which no one seems to eat. A light cheesecake on top of a gluten free biscuit base, with raspberry sauce swirls. Not the easiest thing to hide a £1 coin in though.

Mini Apple Cranberry Pies with Pecan Streusel

Bitesized (just about) mini cranberry/apple pies with pecan streusel topping. The caramel makes these good on their own, but you could also eat them with custard.


Makes about 14 deep filled apple pies.
