Strawberry and Banana Muffins

Muffins… not cupcakes. For the uninformed, muffins are (usually) bigger than cupcakes and don’t have frosting. Starbucks and other coffee shops try to sell muffins as health food, but really they’re as much of a dessert as any other cake.

These banana muffins have chunks of strawberry in and use whole wheat flour for extra flavour.

Chocolate Hazelnut Banana Cupcakes

Banana, chocolate, hazelnuts and marshmallows in one cupcake? What an awesome idea. I split these banana cupcakes into two – half filled with Nutella and chopped hazelnuts and frosted with marshmallow buttercream, and the other half filled with marshmallow buttercream and frosted with Nutella and hazelnuts.

Peanut Butter Banana Cookies

Chewy cookies with bananas, chocolate chips and chopped peanuts. These are due to my recent rediscovery of peanut butter. They’re chewy on the outside and soft in the middle. As cookies go, these are actually pretty health (as long as you pick the right peanut butter – see note below).


Good peanut butter makes a world of difference when making cookies or any other type of cake where peanut butter is the main flavour. Go for a natural peanut butter for a better taste and lack of unnecessary sugars and oils. I prefer Meridian Crunchy peanut butter because it’s smooth (so it needs stirring first) but there are also chunks of peanut in it.

Bananas Foster

This is the USA’s version of a British bread and butter pudding. Originally made in New Orleans, it’s made with bananas baked in custard and is served with a rum caramel sauce.

You can use any type of bread – I used a French stick but in searching for recipes, I found versions which used Italian panettone, croissants and brioche.

Banoffee Brains

I go through phases of love and hate with bananas. I’ll avoid them for months then eat them until I’m sick of them. With it being so long since I’ve eaten them or used them in baking, I’m rekindling my love of them.

After the strawberry brain pudding went down so well, I wanted to try something a little different and get my money’s worth from the brain moulds. These Banoffee Brains have an Oreo biscuit base topped with banana custard with chunks of banoffee fudge.

Peanut Butter Banana Pie Pops

With my new found obsession with pies on sticks, I wanted to try a peanut butter and banana version which would be just enough for one serving. These pie pops use an all butter whole what crust. I glazed half with chocolate and Dr Oetker banoffee sprinkles, and the other half with a honey glaze and chopped peanuts.

Hummingbird Cake

Similar to carrot cake (but without the carrots) this is a recipe from the American South. With pineapple, bananas and pecans, it’s light like a carrot cake and goes really well with lashings of cream cheese frosting.

Banana Chocolate Chip Donuts

It’s National Donut Day and I’ve had a craving for banana bread for at least a couple of months now. These banana chocolate chip donuts filled a gap. They have a caramel glaze and Dr Oetker Banoffee sprinkles which have chewy bits of toffee and banana pieces. I also used wholemeal seeded flour (which you can sub for plain flour), which adds extra texture.

Tropical Banana Cake

Fitting loosely with the theme of St. David’s Day on 1st March (yellow = Daffodils/Wales?), this banana and coconut cake is loaded with fruit and coconut – I even managed to sneak some rum in.

The sponge base is first soaked in pineapple/rum syrup overnight, then topped with creme patissiere, sliced bananas, whipped cream and coconut.
