This swiss roll cooked perfectly without splitting and was light and airy. I filled it wit cinnamon cream cheese, but lemon curd or PBJ would also work well.
Despite the success of last years batch of Zimtsterne, I wanted to try a different recipe this year. These are frosted with meringue before baking, and the spices make the flavour really strong.
Don’t give these to the reindeer if you expect them to see straight. The pastry has a subtle lemon flavour from the grated zest and is loaded with rum spiked mince pie filling and topped with a wholemeal streusel topping. You can serve these with custard or spiked rum sauce.
Spiced molasses cookies with chunks of candied peel. These are a cross between a cake and a biscuit – they’re soft, chewy and strongly flavoured with cinnamon.
Speculaas are a traditional Dutch spice cookie eaten around the dutch celebration of Sinterklaas. They’re usually made with wooden moulds, but since these are expensive when you’re only making a small batch, you can use regular cookie cutters instead. They use their own blend of spices which gives them a unique taste.
These are blondies (brownies without the chocolate) with a layer of apple in the middle and a cinnamon maple glaze on top. Great to make at Halloween if you do have any apples left.
Independence day seemed as good an excuse as any to make donuts, and I had some tricolour sprinkles left over from St George’s day in April. These have big chunks of apple and are spiced with cinnamon, nutmeg and cloves, then covered in white chocolate.
With all of the donuts I’ve been making recently, the humble cinnamon covered donut hasn’t had a mention so far. I’ve also been itching for an excuse to try out the Dr Oetker salted caramel cupcake filling I got a couple of months ago. There’s no yeast in these, so if a baked donut is between a cupcake and a donut, these would be somewhere between a baked donut and a mini cupcake. They’re soft like donuts but they were made in my shiny new mini cupcake tray.
Cream cheese… in a pie?! Yep – in honour of Pi Day on 3.14.15 (which happens to be my birthday), this apple pie has a whole wheat crust and a layer of cheesecake between the crust and apples. Combined with a lattice top and cinnamon sugar it’s a great alternative to a birthday cake.
Is it doughnut or donut? Either way, my mini donuts pan has seen nowhere near enough use since I got it a couple of years ago. These donuts have small chunks of apple in and are extra light, which makes it really easy to eat three or four at a time. You can either eat them plain, dust with icing sugar or glaze them as I did. Not only do they taste good, but if you use fancy sprinkles they look awesome too.
