Midnight Chocolate Cake

A light chocolate cake with cream cheese icing in the middle and chocolate ganache on top. The ‘midnight’ part comes from the star sprinkles on top, which symbolise the solstice on 22nd December. As a bonus, I also made a giant whoopie pie from the trimmed top cake domes.

Cheesecake and chocolate cake in one cupcake. These cupcakes have a chocolate bottom and sides with cheesecake in the middle. The have an espresso chocolate buttercream frosting and are an excuse to use your choice of sprinkles (eg: golden stars for New Year’s).

Tiramisu Cupcakes

Kahlúa Mascarpone Frosting

A thick, mascarpone based frosting with Kahlúa for a smooth coffee flavour.

Ingredients
  • 200g mascarpone cheese
  • 25ml Kahlúa
  • 150ml double cream
  • 15g icing sugar
  • Cocoa powder to dust
Instructions
  1. Beat everything until smooth and light.
  2. Spread over cooled cupcakes. A sprinkling of cocoa powder is a nice touch.

Coconut Coffee & Walnut Cake

The texture of this is similar to focaccia bread in that it’s fairly dense, but is well complimented when sandwiched together with mascarpone filling. The coconut flakes were a twist which I’d do again.

Mascarpone Coffee Cream Cheese

A strongly flavoured coffee frosting which goes well with coffee cake – it’s not very sweet. I used this for Coffee and Walnut Cake.

Mascarpone Coffee Cream Cheese

Ingredients
  • 1 tbsp golden caster sugar
  • 1 tsp instant coffee granules
  • 3 tbsp water
  • 70g light mascarpone
  • 50g cream cheese
  • ½ tbsp icing sugar
  • 1 tsp vanilla extract
Directions
  1. Melt the sugar and coffee in a small saucepan with 3 tbsp water, then boil for about 2-3 mins until thick and syrupy.
  2. Cool before use - when cool it should be the consistency of treacle.
  3. Beat the mascarpone, cream cheese, icing sugar and vanilla until smooth.
  4. Stir in the cold coffee syrup and spread or pipe onto cupcakes/layer cake.
