These mini loaves are a cross between a peanut butter cupcake and gingerbread. They have a strong caramel flavour with peanut and cranberry chunks. The frosting on top is a peanut butter frosting.
Buttermilk quickbread (that’s bread without yeast) with cranberries, walnuts and orange zest. These have a sweet yogurt topping and grated orange zest on top.
An easy to make apple and cranberry tart with caramel apple filling. Like a toffee apple, but in a tart… and with bourbon. I preferred this to the Apple and Cranberry Caramel Tarts I made a few years ago because it was lighter and there was more fruit and less caramel. I served it with vanilla custard but you could also serve it with ice cream.
Soft and delicious cupcakes with chunks of raspberry fudge and chopped cranberries. Filled with homemade raspberry jam from last summer and frosted with kirsch cream cheese and hearts. The smell when I was filling these was amazing – a kind of juicy sweet smell which wafts out when you break a blueberry muffin in half from the Starbucks or Costa.
The raspberry fudge was one of the more unusual items in a Christmas baking goodie box I received. I knew it was going in these cupcakes the second I saw it.
I never pass up the chance to use my mini loaf pans. Any kind of traybake which is remotely seasonal (cranberries are a Christmas thing afterall) and I rush to the kitchen to make mini loaves. These cranberry mini loaves have white chocolate chips and natural yogurt topping. If you don’t share my love of mini loaves, you could also use a 9×13″ pan.
This recipe can be easily varies by switching the cranberries for raisins (Oatmeal & Raisin), chocolate chips or nuts of your choice.
A chewy cookie with pieces of white chocolate and cranberries scattered throughout. You can swap the cranberries for cherries, raisins or nuts if you prefer. I did half with white chocolate/cranberry and half with chocolate/orange raisin. Makes 15 cookies.
With Valentine’s Day fast approaching, I needed something which I could either decorate as a heart or shaped like a heart. Cookies tend to end up as splats after baking, but these held their shape well.
Good for weeknights, these were quick to make and gone in a day. There’s also plenty of chance to dip them in chocolate and festive sprinkles for Christmas. It’s an easy one to split up into multiple flavours. I did pistachio/cranberry and white chocolate/cherry.
