Baked donuts with a fresh lemon flavour and a lemon yogurt glaze. I coated some with cyrstallized ginger and some with mini lemon meringues.
Scones are a quick win – they’re easy and quick to make, fairly difficult to get wrong and by changing the fillings and ratio of milk/cream/yogurt/buttermilk you can vary the texture for a slightly different result. These have lemon meringue chunks and crystallized ginger.
There’s been a pack of kiwis has been staring at me from the fruit bowl for the last couple of weeks. This kiwi tart looks fantastic and tastes good too. Unlike some disastrous lemon tarts from the past, the curd sets without refrigeration to a stable consistency.
Lemon cookies shaped like chickens – with a little over a month to go until Easter, my Easter baking season has officially started. These are coated in desiccated coconut, have peanut butter feet and lemon meringue noses.
‘Tis the season to be eating mince pies. These are quick to make and taste great. You can experiment with different flavours in the pastry to vary the end result. I used lemon and oranges, but finely chopped cranberries might also work well. Serve with brandy or rum custard. This makes 12 mince pies.
Mini loaves filled with poppy seeds and topped with lemon frosting and lemon meringue sprinkles. Makes 3 mini loaves (and one cupcake). I picked up the sprinkles from Tesco, but you can get them from most supermarkets.
You can leave the tequila out for a kid-safe version of these – they’re crispy and taste strongly of lemon.
This is naturally gluten free and full of tart lemons on a ginger coconut base! Makes 7x10cm cheesecakes.
I was desperate for a chance to use my mini bundt cake pan, and lemon drizzle cakes are the perfect excuse. These have chunks of mixed peel and loads of poppy seeds. I made mini bundt cakes, but cupcakes would work just as well.
These lemon sponge puddings are a great chance to get your citrus fix. Light sponge with lemon syrup. I baked mine in a mini bundt cake pan for extra fanciness, which makes slightly bigger puddings that regular cupcakes. The recipe should make around 8 cupcakes or 6 mini bundt cakes. You can leave out the rum if you’re not an alcoholic.
