Macadamia Maple Tarts

I was given a bag of macadamia nuts for Christmas and they’ve been staring at me every time I open the baking cupboard since. The obvious use for them would be with white chocolate, in a cookie, but that seemed so… predictable. This whole wheat crusted caramel tart goes really well with vanilla ice cream. The maple syrup caramel filling is a great compliment to the macadamias. I used a combination of shortening and butter, but an all-butter crust would also be nice to try.

Oatmeal Hobnob Bars

An oat flapjack base with peanut butter and dates, filled with a marshmallow centre and topped with peanut butter Rice Krispies. Like a hobnob – only with peanuts… and marshmallows!

I packaged these up with individual labels, which looks great but seems to take forever… The link to download the labels is after the jump.

Maple Syrup Cream Cheese Frosting

Cream cheese frosting sweetened with maple syrup instead of the usual icing sugar. I used this on blueberry cupcakes but it would work well on any kind of vanilla cupcake.

Serves: 6 cupcakes
Ingredients
  • 110g (4oz) cream cheese
  • 75ml (1/3c) maple syrup
  • 250ml (1c) chilled double cream
Directions
  1. Beat the cream cheese and maple syrup until smooth.
  2. In another bowl, whip 250ml chilled double cream until soft peaks form.
  3. Add to cream cheese mixture and beat until desired consistency is reached.

Maple Pecan Granola

Big chunks of oats and nuts make this great for sprinkling in yogurt with honey. Stays fresh for a couple of weeks in an airtight container.

Maple Syrup Buttercream

Smooth buttercream sweetened with maple syrup. I used this on blueberry filled cupcakes.

Ingredients
  • 1 tbsp maple syrup
  • 145g icing sugar
  • 60g unsalted butter, softened
  • Dash salt
  • 1 tsp vanilla extract
  • 30ml whole milk
Directions
  1. Beat the maple syrup, butter, vanilla extract and salt until fluffy.
  2. Slowly add the icing sugar.
  3. Start by adding 1 tbsp (25ml) milk, then add more if required to reach a spreadable/pipeable consistency.
