Chocolate Bonfire Cupcakes

Last year’s ‘Bonfire Muffins’ were a good learning experience, but this years attempt was 100x better. This is now going to be my ‘perfect’ sponge recipe – it turned out light, but solid enough to hold together with the frosting. The orange buttercream on top is two-tone (red in places, orange in others). I sprinkled popping candy on top just after piping the swirl, which with hindsight might have been a bad idea because it started popping straight away. If you’re making these for a party, you could either add the popping candy just before serving or serve it on the side for people to sprinkle on themselves.

Chocolate and orange are a great combination. I prefer mini loaves to individual Jaffa cakes – they’re easier to decorate and you can slice them for different serving sizes. I topped these with chocolate ganache and candied orange peel.

Cookies – White Chocolate/Cranberry, Chocolate Orange

A chewy cookie with pieces of white chocolate and cranberries scattered throughout. You can swap the cranberries for cherries, raisins or nuts if you prefer. I did half with white chocolate/cranberry and half with chocolate/orange raisin. Makes 15 cookies.

Sour Cream Orange Frosting

A tart frosting which sets after being spread onto cupcakes. Goes well with carrot cake and nuts.

Ingredients
  • 240g powdered sugar
  • 80ml sour cream (full fat)
  • 20g unsalted butter, softened
  • 2 tsp grated orange peel
Directions
  1. Beat everything until smooth, then spread over the cooled cupcakes.

These were easy to make and were easy to flavour with orange raisins and white chocolate. I made some orange butter as well by creaming unsalted butter, orange zest and orange juice.
